I like to find quick and easy recipes to make because like most people I don't have a lot of time but I don't feel like going out to eat. So I'll make a quick soup and pair it with something else like a sandwich.
A great soup I like to make is a White Bean Soup I cut out of an old Shape magazine a couple of years ago. It's very delicious and filling.
White Bean Soup with Spinach and Leeks
serves 4
Cook time: 8 min
Ingredients:
2 teaspoons olive oil
4 leeks, rinsed well; white portion chopped (discard green tops)
2 cloves garlic, minced
2 teaspoons ground cumin
3 cups fat-free vegetable or chicken broth
2 (15.5 ounce) cans white (cannellini) beans, rinsed and drained
2 bay leaves
1/2 cup whole-wheat couscous
2 cups packed spinach leaves
Salt and black pepper
Directions:
1. Heat oil in a large pot over medium-high heat.
2. Add leeks and garlic and saute 2 minutes, until tender. Add cumin and stir.
3. Add broth, beans and bay leaves and bring mixture to a boil. Add couscous, reduce heat to low, cover and simmer 5 minutes.
4. Remove bay leaves and discar; stir in spinach leaves and cook 30 seconds, until spanich is wilted.
5. Season to taste with salt and pepper. Then serve.
Enjoy the first day of spring.
